Created in celebration of Easter, this cake embodies the refinement and freshness of the spring season, where luminous citrus notes harmonise with deep, nuanced character of matcha.
Carefully composed layers unfold with precision: a vibrant yuzu gelée offering brightness and clarity, a smooth matcha ganache delivering depth and silkiness, and a delicate gluten-free matcha biscuit providing structure and balance. Each component is crafted to complement the next, resulting in a composition that is both elegant and restrained.
The cake is finished with a cloud-light yuzu cheese mousse, adding a gentle note of Japanese citrus and a fresh, smooth finish.
